Tofu Stir Fry

Alex is using precooked and marinated tofu for this recipe but if u prefer to make your own you can find instructions below.


250g Precooked Marinated Tofu

100g Carrots

1 Courgette (zucchini)

2 Red Bell Peppers

200g Bean Sprouts

1 Medium can Pineapple chunks

100g Mushrooms

1 Red Onion

2 Cloves Gralic, crushed

1Tbsp Soy Sauce

Juice of 1 Lemon

1tsp turmeric

1tsp paprika

50g Coriander, chopped

Olive Oil


Cut the carrots, courgettes and red peepers, julienne. The julienne cut is actually rather easy to accomplish, especially with the assistance of a mandoline. Learning how to julienne properly is important to ensure that each slice cooks evenly and thoroughly. Chop the onion, and coriander. Cut mushrooms in half, crush the garlic and juice the lemon.  It is essential that all the food prep is done before you start cooking as the cooking itself will only take a few minutes and you don’t want to overcook a stir fry as it will lose all its crispness. Once all prep is done, start to heat your oil in a wok.

STEP2: Longest to Cook

Once the oil is heated add the carrots, courgettes and peppers. You want to add these first as they take the longest to cook and you want to make sure you cook everything in order so you don’t end up with soggy limp vegetables. Cook these for around 3 minutes.

STEP3: Medium Cooking

Add the onions and mushrooms cook for another 1 minute

STEP 4: All in One

Add turmeric and paprika, you can add any other spices you would like, whatever is handy. Then add the garlic, lemon juice, soy sauce and coriander. Cook for about another minute. The last thing you want to add are the bean sprouts and really you just want to heat them so just before you take off the heat add the sprouts and give it a quick stir. Serve hot.



It is so versatile it can be used in stir fries, or any savory dish such as kebabs especially


  • 2 tbsp soy sauce
  • 2 limes
  • 5 cm of grated ginger
  • 2 tbsp sweet chillie sauce
  • 1 tbsp paprika
  • 2 cloves of crushed garlic


Crush the garlic and grate the ginger.


Place the tofu into a small bowl of water, letting it soften up and moisturize. After about 10 minutes, take the tofu out of the water, place it onto a layer of kitchen towel, and use the ends of this kitchen towel to adsorb this water from the tofu. Throughout this process you must be careful handling the tofu because it is rather delicate, and it might collapse or crumble if one is too vigorous with it. Take the tofu, place it onto a large chopping board, and slice the tofu very slowly, forming very thin and even slices. Decoratively and evenly place this sliced tofu onto a serving dish ready for serving.


Into a small mixing bowl, add the soy sauce, then add the garlic, then add the grated ginger, and then finally add the chilli sauce. Give this mixture a little stir before very gently drizzling it over the tofu slices, making sure as much tofu receives as much of the mixture as possibl
